FRIED CAULIFLOWER RICE
INGREDIENTS
• Red bell pepper
• 2 eggs
• Cauliflower rice (make your own by grating 1 head of caluiflower OR I highly recommend getting the pre done bag at Trader Joe’s!)
• 1 bag of frozen edamame
• 1 Green onion
• Minced garlic
• 2 T Sesame oil
• Soy sauce (or coconut aminos if you’re gluten free)
• Salt
DIRECTIONS
1) Pour 1T of sesame oil in a medium sized pan on medium high heat.
2) Add 1 bag (or 1 head) of cauliflower rice to the pan. Drizzle with about 1T of soy sauce (or coconut aminos if you’re gluten free).
3) Chop 1/2 a red bell pepper. Add the bell pepper, a handful of edamame and 1 tsp minced garlic to the pan. Stirring frequently.
4) Push the mixture to one side, then crack two eggs on one side of the pan. If you’re vegetarian then skip this step. Leave the eggs in tact and cook for 3 minutes. Once they are partially solid begin to stir into the cauliflower mixture - this allows for some chunks of egg like actual fried rice. Add 1T additional sesame oil to the pan - if you have toasted sesame oil that’s even better!
5) Use scissors to cut 1/2 of a green onion, add to the pan. Add more soy sauce (or coconut aminos) to taste. Serve and enjoy!
