HOMEMADE POTATO SALAD
Serves 6
Ingredients
5 yukon gold potatoes
1/3 lb green beans (or 1 stalk of celery chopped, but I personally prefer green beans)
1 pack of bacon
2 boiled eggs
1/2 cup mayonnaise (more to taste)
1/2 T Dijon
2 T apple cider vinegar
1/4 cup olive oil
1/2 tsp garlic powder
1/4 tsp salt
Parsley
Cut 5 medium/large Yukon Gold potatoes in cubes and boil until tender. TIP: cutting into cubes BEFORE boiling is important to cut cook time + make sure the potatoes stay in tact.
Cook the bacon. Preheat a pan on medium high heat with 5 pieces of bacon. Cook until very crispy, about 5 minutes each side.
Make the dressing - garlic powder, olive oil, apple cider vinegar, mayonnaise, Dijon, salt and pepper to taste.
Blanch green beans, cut in half and add to the dressing. OR chop 1 celery stalk and add to the dressing.
Peel and slice two boiled eggs.
Wait for the potatoes to cool slightly for about 10 minutes, otherwise they will soak up all the dressing! Then toss the potatoes, green beans/celery and eggs together with the dressing. Make more dressing as needed since the potatoes could soak it up quickly. Crumble 5 slices of chopped bacon, some chopped parsley and serve. Enjoy!
