Fried Green Tomatoes

INGREDIENTS
3 firm green tomatoes
Gluten-free Ian’s breadcrumbs
Gluten-free flour
Corn meal
Lactaid milk
1 egg
Vegetable Oil
DIRECTIONS
Prep three separate medium bowls. The first with a 1 cup gluten-free flour. The second with an egg and milk, whisked. The third with equal parts corn meal and breadcrumbs, about 1/2 cup each, and salt & pepper.
Slice the tomatoes about 1/2 inch thick then coat each one. First coat in the flour bowl, then the egg mixture, then the corn meal and breadcrumbs.
In a large pan, pour vegetable oil so it covers the pan and is 1/2 inch high. On medium high heat place the tomatoes in the pan and cook for about 3-5 minutes each side, until golden brown, then flip.
