BREAKFAST-ON-THE-GO
INGREDIENTS
• 4 eggs
• Frozen hash browns *I like using the Alexia brand, since there are no additives
• Lactaid milk
• 1 sausage link *I like Aidell’s sausage
• Butter
• Salt & pepper
DIRECTIONS
1) Use a small nonstick loaf pan. Slice up 1 teaspoon of butter along the bottom to ensure it doesn’t stick - that’s the worst!
2) Preheat the oven to 400. Generously line the bottom of the pan with frozen hash browns. For crispier potatoes, bake for 15 minutes while making the rest of the ingredients.
3) Whisk 4 eggs with some lactaid milk, salt & pepper. Thinly slice one sausage link and sauté on medium high until charred.
4) Take the pan out of the oven and add the egg and sausage mixture.
5) Bake at 400 for 20 minutes or until the egg is cooked. Slice and eat or save it for the week (just microwave for about 30 seconds)!
