LEMON + GARLIC GOAT CHEESE PASTA
INGREDIENTS
• 1 pack of spaghetti *gluten-free optional
• 1/2 teaspoon garlic paste
• 1 lemon
• 3 tablespoon goat cheese
• 1 egg
• olive oil, salt & pepper
DIRECTIONS
1) Cook the pasta — I personally love Ancient Harvest Quinoa Spaghetti.
2) Make the sauce: 1/2 teaspoon of garlic paste, add juice from half a lemon and zest from 1 lemon, 3 tablespoon of goat cheese and salt + pepper to taste. Whisk in a large bowl until mixed, then add the cooked pasta.
3) In a large pan make an over easy egg. Cook for 2 minutes on medium low heat, cover and cook for about 3 minutes until over easy.
4) Plate the pasta, then add the egg to the top. Enjoy!
